East Independence Boulevard was once one of Charlotte's major commercial corridors.  Thus, automobiles and trucks became the principal means of transportation through this area.  Over time, as Charlotte became increasingly populated, eateries and restaurants such as Athen's Restaurant became part of the streetscape in Charlotte's center city.  Many restaurants such as Athen's Restaurant were owned by Greek families who had immigrated to the United States, and at first had taken jobs in restaurants as dishwashers, where they learned the recipes of "American dishes."  Popular American dishes became combined with popular Greek dishes to create restaurants like Athen's Restaurant.  Greek-owned restaurants became very popular and still thrive today.
